California chiles are also known as Anaheim chiles, New Mexico chiles, or Green Chiles. California chiles are specifically derived from the Anaheim version of the New Mexico green chile, specifically grown outside of the New Mexico growing region. The California chile pepper is a milder variety of the New Mexico chile. Include in recipe as it is cooking, or sprinkle on top as a finishing touch to add heat to any dish.
